Okay, if you are like my hubby and hopelessly, endlessly in love with cheese then the following recipe is a MUST TRY! A few months ago my sister came over and made this amazing macaroni and cheese for Dustin and I, so the other night I decided to give it a shot.
Cook 32 oz. bag macaroni pasta al dente (it is going to cook a lot more so DO NOT overcook). Drain pasta and set aside.
Preheat oven to 400 degrees.
In a cast iron skillet, melt 3 Tbls. butter over medium heat.
Saute in diced onion and garlic for 4-5 minutes (amount really depends on preference, I skip onion and use about 1-2 Tbls. minced garlic).
Slowly stir in 4 cups half and half.
Add 2-3 sprigs fresh thyme and let infuse in milk mixture about 5 minutes then remove and toss.
Add in 5 cups shredded cheese (any kind of cheese works; mozzarella, parmesan, mild cheddar, smoked cheddar, blue cheese...).
Once cheese is melted, stir in cooked pasta and top with bread crumbs.
Cover with lid and continue cooking for 25-30 minutes in over.
